Lots of folks are confused about the difference between dry malt extract and liquid malt extract. To simplify things, dry malt extract is simply liquid malt extract with all the water taken out. Dry malt extract costs more than liquid malt for the simple reason that it is more processed and this cost is passed along to the consumer. In certain circumstances dry malt is preferable to liquid malt, i.e. light dry and dry wheat malt will produce a lighter colored beer (golden/straw), which is desirable for wheat beers and very light blond beers.
